Chilly weather is no reason to avoid the grill, check out these ideas

Hearty, warming recipes help transition your cookout from the summer into the crisp, fall weather (think stick-to-your-ribs recipes like stews, grilled meats and braised dishes). Fall favorites like baked beans, macaroni and cheese and corn bread make a great accompaniment for meaty main dishes.

    As temperatures drop , you have to be mindful of how often you open your grill’s lid. Cold air rushing inside will quickly lower your cooking temperature and increase the risk of burning food

    Grill Smarter, Not Longer

    Use these fall grilling tips to take your fall cookouts from tasty to phenomenal.

    “Opening the grill’s lid lets heat and smoke escape,” says Chef John Coletta, owner of Johnny’s Grill in Fairfax, Calif., and author of “Grill Rigs.’  Coletta suggests minimizing grill openings to help control heat. This is especially important when cooking fall favorites like meaty stews. 

    “Meat braised over low indirect heat takes longer to cook than seared meats placed directly over high direct heat,” Coletta says. “Building a two-zone fire helps you sear the outside quickly without overcooking the inside.”

    Place all your fall favorites on the cooler side of the grill to help moderate internal temperatures.  To build an even lower temperature fire, push coals against one side or bank them for indirect grilling. Place fall favorites on the side without coals.
