Memorial Day is just around the corner and the month of May signifies the start of barbecuing season.  This May, celebrate the season with a variety of barbecue techniques including smoking, roasting, baking, braising and grilling.   Barbecuing offers endless possibilities to fire up your favorite dish and satisfy all as you kick off summer.

Grilling and barbecuing differ

Grilling and barbecuing are not the same thing.  When you’re grilling, the amount of fat is reduced from the meat.  While barbecuing the meat is slowly cooked to bring about flavor.  In barbecue, the food is not in direct contact with heat, while in grilling, the food is over direct heat.

Barbecues times can vary

Did you know enjoy barbecuing can last a very, very long time.  Depending on what is getting cooked, barbecuing times can vary a great deal.  Some techniques can take up to 18 hours or longer.    If you are king of the grill, then you don’t need to worry about overcooking your meat.  However, it does happy for many of us.  Try to follow this handy guide
